ohhhh that sounds SO tasty! I love enchiladas.

Yesterday was pizza day for me. I had a slice of pizza,  salad with something called jicama and an ice water at my daughter's back to school night.

Tuna salad w/diced green peppers, little red and green hot peppers (not sure what the are), tomatoes and a dab of mayo on cracked wheat bread and a vitamin water.
