what's the last thing you ate

I had the special at a taco shop w/in our building. It's too hot to venture outside and walk. It wouldn't have been had I thought to bring a change of clothes, which I'll do tomorrow.

Anyway, my lunch was horrible.

3 carnitas mini tacos, refried beans and dried rice. I don't think it was meant to be dried, but it was, so I only had a bite to make sure it tasted as bad as it looked like it did. . The meat in the tacos was over-cooked to so I had 1 and 1/2 w/meat and pulled the meat off #3. The refried beans were good.

That sounds soooo good.  I haven't fixed them like that for years.  Gonna have to do that.

They're pretty good. I made dumplings in place of corn bread, because my oven is still broken.

You can do cornbread on top of the stove if you have a cast iron skillet with a lid.
