Beef heart with dressing. Make the dressing and put it over the heart and bake it for 3 1/2 to 4 hrs depending on the size of the heart. The dressing does have to be super moist, almost runny, to cook that long without getting too dry though.

Beef was a special occasion meal where I grew up (think high mountains) -- and the only cattle I remember seeing were cows. We ate pork.

Daddy was a coal miner, but HIS father was a farmer, so we always had a garden and grape vines and two pigs and a cow, the pigs for pork and the cow for milk.

As for organ meat, all I remember was liver from pigs and chickens, and brains from freshly slain pigs -- which daddy ate with scrambled eggs. The rest of us gagged.  :eek:

Brains are good as long as you get them done but I prefer beef brains because they're bigger and easier to clean. Unfortunately they no longer carry them in the grocery stores.

At least it isn't raining as bad this week as last week, although many areas areas are still under a flood watch.  A lot of roads were closed and one of our branches had to close because of the roads being flooded.

It's unbelievable.   There are still three bridges are closed because they need to rebuild the road.  They are lesser travelled and they concentrated on the main roads that needed rebuilt.  Two amusement parks, HersheyPark and Knoebel's were shut from Monday to Thursday (although HersheyPark did open on Tuesday despite only having less than half their rides operating and rain coming and going throughout the day.  Gotta make money.  :mad:) They both opened after a lot of clean up on Friday.  There were a few videos of Knoebel's with the water storming through the park.  If you want to see it, go to youtube and search Knoebel's flood 2018.

My boyfriend, daughter and I went to a carnival sponsored by the Lions Club.  We went to the bingo hall to play, not expecting to win anything like in past years.  Second card we played both my daughter and I yelled bingo at the same time!  :biggrin: We each won $4.00.  We played again and my daughter won a second time.  This time she won $11.  My poor boyfriend won nothing.   :-[  But we all had a fun time.  I love carnivals!

At work we've been holding these bingo games as a means to help create engagement. "Brown Bag Bingo" sessions are held during lunch periods on all 3 shifts and employees can play bingo and eat their lunch at the same time.

I, as the senior manager on the shift I work, am "required" to play so I go to them during the monthly session. We let them select from a basket of "trinkets" when they win too. Problem is they typically have enough time to play about 10 games in the sessions and the two times we've done it so far I have won 8 of the ten sessions. No fix either. Random cards and only 2 cards per person.  :big grin:  (But I let 8 people select a prize each time, instead of taking one myself).

Maybe I ought to take up Bingo instead of the lottery!  :biggrin:
