Here's a basic filling recipe:

Filling
1 lb ground pork
2 tablespoons soy sauce
1 tablespoon sesame oil
1 teaspoon grated ginger
1 pinch sugar
salt and pepper
3 green onions, chopped
1 egg
1 tablespoon cornstarch
1 (8 ounce) can water chestnuts, finely chopped
1 garlic clove, minced

Just combine all that together and put into the dough.

As for the last thing I ate (for lunch), Panera's Broccoli Cheddar soup, green tea, and a chocolate chip cookie.

Those sound like a pain in the ass to assemble, but they may can be made easier by just buying the dough rather than making your own.

That's the recipe I use!  Very very similar to Friday's pot stickers.  I didn't make my own pot sticker dough, but used won ton wrappers.  The pork mix is easy to make and I put a heaping teaspoon on the wrapper.  They're easy to fold and seal.  I boiled them and put a bunch in the freezer for another meal.  I fried up some for my meal that night.  Oh, I didn't make my own dipping sauce but used teriyaki sauce. 

It's quite labor intensive, but really good.  A good recipe to make when you want to do something in the kitchen, definitely not a week night meal! I made mine on a rainy cold Sunday afternoon.

We're having pizza tonight, but I spent the early afternoon prepping the ingredients for my Jambalaya in the slow cooker.

Everything is diced/sliced/measured out so that all I have to do is dump it into the crock pot and turn it on. It's all sitting in the fridge waiting. . .

I can taste it already. . .

Had an Art's sub about an hour ago and will probably regret eating it this late but it was sooooo good. Itilian sausage, ham, roast beef, bell pepper, and provolone cheese.  :drool1:
