Congrats, that is an accomplishment in this day and time when divorce is so easy to get.

On a whim, I made corned beef and cabbage yesterday. It was awesome! (Corned beef sandwich for lunch tomorrow, on rye).

Today I am making country ribs in a special southwest marinade sauce I whipped up yesterday afternoon and left the ribs in overnight. They are in the crock pot as I write this. . .

The last thing I ate at present is a banana nut muffin and a cup of coffee. . . (Those ribs are smelling good though) . . .

Sounds delicious.
I have a roast, carrots, potatoes, onions, celery, and mushrooms in a crock.pot.

Started a beef brisket yesterday, and it came out today.

After a nice rub was applied and a honey BBQ sauce, and 12 hours of roasting in the oven, I sliced that bad rascal up and made my signature potatoes and a home made creamed corn to go along with it.

Damn. It was seriously good and not just according to me, but also is the unanimous judgement of my in-laws. ALL of them.   They were invited for Sunday dinner after church, and I think even my mother-in-law was impressed. (She asked me for the recipe which I gave her).

Friggin' melted in my mouth and was as tasty as anything I've ever had anywhere. (According to me).

Anybody want to guess what I'm having for lunch tomorrow?

At what temperature did you roast it for the 12 hours?  I'm sure it was low and slow.

3 hrs at 250 yesterday, 2 hours at 350 this morning, followed by 3 hrs at 300. Basted with the BBQ sauce at all change points, and checked to ensure tenderness. (Flaked off with a fork when done.)

Oh!  So it wasn't a continual 12 hours in the oven.

We had chicken last night.
Tonight I am going to try a bacon and meat pie. I found the recipe on Facebook so we will see how it works.

Went to the store and they had Strawberry and Rhubarb pie.  Bought one and it was as good as the ones we make in the summer when the Rhubarb is in season.  :pizza:

My grandmother use to make a rhubarb pie. I could never make one. I miss having that and her Christmas float plus her homemade grape juice made from grapes we raised. Somethings you just can't ever have again.

Not this time. . . But it will be next. I needed to get it done and did not have a 12 hour window within which to do that without losing sleep. . .  :big grin: I thought it was 12 but when I did the math it was not. . .  :roll eyes:  4 hours short. . .

I was prepared to take everyone to a local eatery if it was not tender enough; but it was. . .
