I like to smell veggie soup cook all day but I would use my pressure cooker if I had a less tender cut of beef I was using.  The only thing I use my pressure cooker for lately is to fix a pot roast with ketchup and mushrooms.  Believe it or not it's good that way with some mashed 'taters.  I just take the roast and cover the top with ketchup and mushrooms and cook it in the pressure cooker for 45min.  When I was first told about it I thought it sounded gross 'cause I really don't like ketchup that much but decided to try it and found it to be pretty good that way.

  PH, how would you like my grandmother meatloaf recipe?  My wife who is a good cook tweeked it and for Christmas dinner, the family, by request eat her meatloaf and grandma's potato pudding.

  I could dig it out and give it to you.  It is so good and if you fix this, your family will think you one hell of a good cook.

I'd love it! This one we could eat at least, so the pizza stays in the fridge. But it just isn't good enough and I am not satisfied with it.

  Here is the recipe, it is so simple and good.  Don't add anything and don't leave anything out.

  1 pound of good hamburger

  1/2  package of crushed crackers.  Saltines.  Don't use any others.

  2 eggs beaten well

  1 small onion diced small

  1/4 catsup

  1 teaspoon mustard

  salt and pepper as usual. is to your taste, 1 teaspoon of salt, not to much pepper

  Enough milk to make it stick together and make a nice loaf.  Not to much.

  Bake for 1 hour at 350 degrees until internal temperature is 175 degrees.  I like to tell all people, we're working with hamburger and eggs and we want it done.

  Take out of oven, cover with a piece of foil and let rest for 10 to 15 minutes.

  That way all of the good juice won't run out on the serving plate when you cut it.

  We have found that over the years, people want to put to much into their meatloaf and don't put catsup on it when baking it.  If you like catsup on it, put it on it after you have sliced it and it is on your plate.  Put in a couple of potatoes in when you start cooking the meatloaf.  Meatloaf and baked potatoes are had to beat.  Butter and sour cream.  Warm up you potatoes in the micro oven for 4 or 5 minutes before putting in oven, makes sure their done in a hour.    Enjoy.

I don't really use a recipe for meatloaf.  I just use ketchup, preferably Heinz but Kroger will work almost as good, oats, eggs, salt, pepper, onion, bell pepper, and garlic salt.  I just put ingredients in 'til it smells and feels right.  The only thing that's even remotely measured is 1 egg per lb meat.

  The next time, try my grandma's meat loaf and leave all other stuff out.  Crackers for the oats, leave out the bell pepper and the garlic salt. and add one more egg.  I think you would like it.

I might give it a try but I've never really liked meatloaf made with crackers for the filler.  I'll take your word for it that it's good though 'cause none of your recipes have disappointed so far.  I'll let ya know what I think after I try it but it might be a while but I will try it.  Got the recipe copied and printed off.   :smile:

  I like that stuff, but I a little lazy.  I take the cube steaks and flour them completely and brown them in about 1/4 inch of oil until they are golden brown both sides.  Then I drain off the oil leaving all of the little brown crumbs on the bottom of the skillet.  Then I take a can of Campbell mushroom soup with a can of milk and simmer and simmer until they are so tender and sooooo good.  Usually you don't have to even thicken it.  It's just perfect.
