  I like to take them and cut them like french fries.  Dip them in a egg wash and coat them with cracker crumbs, fry golden brown and a pinch of sea or Kosher salt.  For me a plate full and a cold drink and you don't need anything else.  Same thing with egg plant, peel, cut in slices 1/2 in. thick, salt the slices and let them sweat 20 min., it takes the bitterness out, rinse, dry, egg wash, cracker crumbs and fry golden brown.  I like this better than the Zucchini. 

  Everybody I have cooked them for, just loves them.

Yum - I've used zucchini and egg plant both as pizza (oh! another way to use shredded zuchinni, PH, check the recipe thread - it's delicious)

But your description is making me want fried green tomatoes. I haven't had those for years.

You obviously know you can shred up all that zucchini and then freeze it right? Get a "foodsaver" sealer and you can keep it frozen for a couple of years, and it will still taste as fresh as the day you shredded it!  :yes:

  Talking about zucchini's, some years back there was a morining talk show on the Fort Wayne radio station.  The one guy on it said that during Zucchini season you had to keep the door of your car lock when you went uptown, where he lived.  Or you would find a couple large sack of Zuccihini in it.  He kept the car locked in his driveway because the same thing would happen there.

It's amazing how many Zucchinis you can get off two or three plants.

I didn't realize how much it had rained last night 'til I seen a lot of yards standing in water south of town.  My daughter said it rained around 1:00am just as hard as it did at 5:00am.  Whats odd is her basement which usually has water in it after a rain like this is dry and ours which is usually dry has water in it...... :dizzy2:

I wish it would rain here.  We haven't seen rain for weeks!  The temps are a bit cooler today being in the low to mid 90's!!  I want a good thunderstorm!

North Carolina.  Some of the lucky people along the coast are getting pop up thunderstorms in the afternoon on occasion, but for the most part we are dry and hot!!

I may not be back to a regular schedule until sometime next week. . . As you allude to, lots of "details" consuming my time. . . But I will be on once in awhile as I can sneak time in.

when you do the estate thing, take my word for it, get at least 20 certified copies of the death certificate. It is now 14 years after my father's death and 11 years after my mother's death, and just this week I had to produce certified copies of their death certificates for the state government.

  He's right and if your the Exector of the estate, keep all of your and your mothers records.

  I had given my brother in law my dad's car and two years later to get it up back into my name, I had to show his death certificate.  I hope everything is over, but I got the papers close.
