This isn't a vent but.... this morning when I walked in to work, I thought I had crossed over in to the Twilight Zone... (cue the music) My boss came up to me and said " I was bored last night so I did most of your salad stuff"  :spooked: I said "What did you say?" and she says "most of your work is already done." I thanked her profusely. I'm not sure where the body snatchers took the real Karen..... but WOW!!! That was awesome!!! I think she knows that it's starting to pull me down. My legs ,back, and feet are killing me, and I have to do it again next week.  :spooked: I almost didn't make it out of my car when I got home.  :no:

My wife and I both work long hours and we have come to depend on instant mashed potatoes as part of a quick meal.

Buy a good brand - Betty Crocker, Idaho Spuds (my favorite) - and switch the measurements for the milk and water.

That is - if the box calls for 2 cups water and 1 cup milk, instead use 2 cups milk and 1 cup water. Also use real butter, not margarine.

I'll have to try the switching thing. I hate instant potatos, but they are fast and Lil Mojo loves them.

Adding extra butter helps too.  I keep a box just in case I am short on time or run out of 'taters.  What Bo D suggested really does make a difference and if ya don't mix 'em too thin they don't make bad 'tater cakes either.

I do that too!!!!  :biggrin: My Grandpappy used to make the best mashed potatoes. He used real potatoes. The red ones. He cooked them and mashed them, and then he would heat the milk and butter in a pan,and add it to them. They were out of this world. Sometimes I put milk and margarine,and cream cheese in my homemade potatoes, it's pretty tasty. :yes:

They are a lot more convenient than having to peel them. We don't eat them a lot. I think most of the time the homemade are worth the effort. :yes:

A friend of ours sometimes puts sour cream in her mashed potato's.  I'm not a sour cream lover and the first time I seen her do it I was like eeewww but they weren't bad.

Do you put onions in yours?  I sometimes even put finely grated cheese in mine.  Makes it a little hard to clean the skillet but tastes yummy so its worth it.   :biggrin:

I haven't made them in like forever, but I think I use onion powder, and garlic salt. Damn, that sounds good, I need to make some.  :yes:

We have them a lot for breakfast with either eggs or sausage gravy.
