I made these jalapeno spring rolls. Cream cheese (vegan), shredded cheddar (not vegan) and jalapenos...all mixed in a bowl. let sit for 30 min, the roll up in eggroll wrappers, then pop em in the deep fryer.

Ahh bliss. Its a cross between a jalapeno popper and an eggroll!

Hubby got in around 6 am. I heated up some pasta fagiole and the jalepeno egg rolls for him. He said he'd died and gone to heaven. Affirmation that I wasn't just dreaming my cooking was tasty.
