Nachos Bell Grande -

I stopped at the local Taco Hell and ordered my wifes favorite (the above) with no sour cream and extra nacho cheese. I also ordered something for myself and the rest of what she wanted. And waited.

Finally, the guy comes up with a Nachos Belle Grande with extra nacho cheese and sour cream, and says, "I made it wrong, so I remade it. But do you want this one too?"

Yeah. I'll take it.

So I get home and decide to go ahead and eat it since my wife wouldn't eat sour cream if she were starving, and wouldn't eat anything sour cream has touched. . .

Now I have two Chalupa Supremes sitting in the fridge for tomorrow. . .  :biggrin:

I've been thinking about a Reuben, on German rye bread with corned beef and sauerkraut, grilled. I don't know of a place near me that makes them the way I like them, so guess I'll have to make my own.

Making tacos for supper. My son requested homemade banana pudding, now I don't claim to make the old fashioned kind because I never made it but I made the quick and easy kind.

You mean from a box?  Homemade pudding isn't that hard, just lots of stirring like any pudding made on the stovetop.  I've made it in the microwave a few times.  Need to make sure you put it in a large bowl or measuring cup (I have a 1 liter measuring cup) or else it runs over and makes a big mess.  :-\  Though having pudding without additives is worth the work.

. Yeah, the pudding isn't that hard to do but my grandmother use to make it in the oven with a homemade meringue. Have you ever made homemade meringue? I haven't with pudding but have with pies.

In the oven?  Like a pie?  Never heard of making pudding in the oven unless it was poured into a pie crust, but whenever I would do that, I always cooked my pie crust and cooked my pudding on the stovetop and then put it in the crust after it cooled.  And then topped it with homemade whipped cream.  Yum!

Only with lemon pudding, aka lemon meringue pie.  Actually, that's the only time I ever make meringue, for lemon meringue pie.  Cherry pie I like with a thick crumb topping and other pies I like with a regular crust on top.

I found my mom's. I don't know if she got it from my grandmother or not but here goes.
1/3 cup all purpose flour
1 dash of salt
2 1/2 cups of milk
1-14 oz. can of sweetened condensed milk
2 egg yolks
2 teaspoons of vanilla extract
3 cups sliced banana
45-50 vanilla wafers
4 egg whites
1/4 cup sugar

Mix flour and salt in a large sauce pan
Add milks and egg yolks to pan slowly, stirring constantly over medium heat until mixture thickens about 7-8 minutes. Remove from heat.
Stir in vanilla.
Layer enough bananas to cover the bottom of a 2 qt. Casserole dish. Cover the bananas with a 1/3 of pudding mixture and layer with a 1/3 of vanilla wafers.
Repeat layers starting with bananas, then pudding, then vanilla wafers.
Do the layering a third time as usual, except do not cover pudding with wafers. Place the wafers around the edges of the casserole and tucked into the pudding.
Beat egg whites at a high speed until they foam.
Add the sugar gradually. Keep beating until stiff peaks form.
Spread this over the top of the pudding, forming a seal to the edges.
Bake pudding at 325 for 25 minutes or until meringue becomes a light golden brown.
