Got adventurous and tried something different tonight.  We had some left over meatloaf and I really didn't want to have sandwiches nor did I want to heat it in the microwave and fix sides soooooo......I put on some fried potato's and crumbled the meatloaf into large chunks, put it in the fried potato's about half way through cooking them, and put shredded cheese on top after the potato's got done.  It was actually good and I only dirtied one pan to fix it.

1/2 Carne Asada torta (sandwich with carne asdada, lettuce, tomato and guacamole)

Pork chops, cottage, and hominy....now I'm thinkin' real hard about something to snack on...

me: Here's one of my favorite foods in the world; my dad used to fix it when Mom worked nites and Dad watched us (we called it "Navy food" 'cause they served it on his WW2 ship); fry up your taters till they're getting nice and brown, then drain the grease off. Pour in some egg / milk (scrambled eggs) mix and stir till it sets up. Serve hot. Ever tried that? I could eat it most every day of the week. Miss you Dad.

Pa I thought about you today.  There is a show on the Food Network called "Down Home with the Neely's" and they were in North Carolina looking at food you can get here but also order and have shipped.  They went to Ole Time BBQ in Raleigh and had vinegar based BBQ.  Order some and enjoy!

I do fix something similar to that.  I put sausage, ham, or bacon in it, depending on which one sounds the best on any given day, and green onion tops or diced onion, bell pepper, and melt shredded mild cheddar cheese on the top.  That used to be one of our must fix breakfast's when we went camping and now I sometimes fix it for supper if we get a cravin' for it.  I will have to say it's a lot easier to fix for 5 than it is for just two...lol
