Speaking of tilapia...............

Take some heavy foil and drizzle a bit of olive oil on it.

Place a handful of fresh spinach leaves on top and drizzle with more oil, salt and pepper.

Place a tilapia filet on top of the spinach.

Sprinkle with fresh, chopped garlic, salt and pepper or whatever you like.

Top with fresh tomatoes and drizzle more oil.  Top with a lemon slice or two.

Wrap up in a little packet and pop in the toaster oven at 350 for about 10-15 mins.  (Longer if filet is frozen)

That was soooooo good for a light supper last night!!
If you don't have anything nice to say then come over here and sit by me!

The homemade pizza was so good yesterday.   So, I made another one today.  ;D

I agree, homemade is better. It is more time consuming though. It's easier to just blow through the drive thru.  :chop: And you get to look cool on your bike LOL!!!!  :biggrin:

I wish I would have seen that before I fixed supper tonight. I had tilapia, but just seasoned and grilled. It was tasty, but that sounds really good. :yes:

Chicken and penne pasta with sauted onions, red and yellow peppers, and eggplant all topped with pesto.  It was a pretty good creation!
