We used to get together with some friends every summer and I'd fix liver and onions w/gravy, fried green tomato's and mashed potatoes.  Not the most healthy meal you'd want to eat but sure was good.  I'd have two skillets of fried tomoto's and two skillets of liver going plus a huge pan of 'taters.  Very seldom where there ever any left overs either.

I swear the only time in my life when I cheered for someone having high cholesterol was when my dad was diagnosed and my mom announced NO MORE LIVER!  It was a blessing for a 10 year old!

I don't think 2 or three times a year is going to be enough to matter in the scheme of things.  Now if a person were to have a stead diet of it, yes, that would be bad.
