  Hey, VXN.  I just had some of my home made cauliflower soup.  I think it is great.

  One head of cauliflower, using only the white part, not the core.  Two leeks or a bunch of green onions, using only the white and light green part.  4 or 5 slices of American cheese.  1/4 stick of butter.  Sea salt and fresh ground pepper.

  Boil the cauliflower and leeks or green onions together until they are tender.   Drain and save some of liquid.  With a stick blender or blender.  Blend all of the stuff together.  Adding some of the liquid until you have a nice real thick soup.  I like it with saltine crackers.  I love this soup.
